Slow Cooker Classic Beef Stew
If you're looking for. a classic beef stew recipe, look no further. This slow cooker recipe is so easy, and it will be your go-to for beef stew. I've been making this for years. It goes even better with toasted sourdough or any crusty bread of your choice.
Ingredients
1 1/2 lb beef stew meat, cut into 3/4-inch cubes 2 tablespoons all-purpose flour
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil 1 lb gold potatoes, quartered 1 1/2 cups frozen pearl onions (from 16-oz package) or 1 large onion, chopped1 bag (1 lb) ready-to-eat baby-cut carrots 1 jar (12 oz) beef gravy 1 can (14.5 oz) diced tomatoes with green chiles, undrained
1/2 teaspoon chopped garlic, or 1 clove
1 tsp Herbs de Provence
1/4 cup water
Salt and Pepper to taste if needed
Optional: fresh chopped flat leaf parsley
Note: If you don’t want it spicy, use plain can of diced tomatoes.
Directions
Sprinkle beef with 2 tablespoons flour, 1/2 teaspoon salt and 1/2 teaspoon pepper; toss to coat. In a skillet, heat 1 tablespoon of oil over medium-high heat. Add beef; cook 4 to 6 minutes or until browned, stirring occasionally.
Add beef, potatoes, onions, carrots, gravy, tomatoes, garlic, Herbs de Provence and water to slow cooker, stir.
Cover; cook on low heat setting 8 to 10 hours or high setting 4-6 hrs.
When done, sprinkle with parsley (optional).
